菊花,你食用过吗?

菊花为菊科植物菊的头状花序,被誉为是秋天的“花中仙子”。我国食用菊花的历史十分悠久,早为医家所习用,菊花气味芬芳,可烹制出多种美味佳肴。

 
菊花粥:
取糯米粳米50克,菊花10克,冰糖30克。先将粳米、冰糖加水500毫升,煮沸30分钟后去渣,调入菊花(晒干磨碎)末,改文火稍煮片刻,待粥稠停火,盖紧闷5分钟后即可使用。疏风清热,清肝明目。 适用于高血压以及外感风热所致头痛目赤、眩晕眼花,肝经风热所致目赤肿痛。气虚胃寒、食少泻泄者少用。本粥夏季食用最宜,春秋亦可,冬季不宜服。

 
菊花肉丝:
猪瘦肉250克,鲜菊花20克,鸡蛋1个。将菊花洗净,摘下花瓣,入温水略烫以去涩味,捞出捏干,抖散盛碟;;瘦肉切薄丝;鸡蛋去黄,水豆粉等调料兑成汁。炒锅烧热,放入猪油50克,待油烧至六成热,将肉丝抖散下锅,再把兑好的汁搅匀倒入锅内,先翻炒几下,接着放入菊花,翻炒均匀,熟即起锅食用。

 
菊花火锅:
菊花火锅盛行于晚清宫廷内,传入开封以有近百年历史。因开封的市花是菊花,因此原料来源得天独厚。它以鲜鱼为主(有“四生”和“八生”之别)。火锅内兑入鸡汤滚沸,取白菊花瓣净洗,撕成茬丝洒入汤内。待菊花清香渗入汤内后,将生肉片、生鸡片等入锅汤熟,蘸汁食用,其滋味芬芳扑鼻,别具风味,被视为火锅家庭中之上品。口味咸鲜,香辣,汤清味美。高血压病、高血脂症、冠心病、肥胖症、糖尿病患者宜少量食用;骨质疏松症、佝偻病患者及孕产妇宜适量食用。
